Let’s Create Some Healthy Luck 🍀
Some people seem to have all the luck. They win contests, always grab the best parking spot, and somehow stumble upon incredible deals. Me? Not so much. But here’s what I’ve learned: luck isn’t something that just happens—it’s something we create.
And the same is true for how we eat.
How we feel, the energy we have, and even our long-term health aren’t random, they don’t happen by chance—they’re shaped, bite by bite, through the choices we make every day. When we opt for fresh, nourishing, life-giving foods over processed convenience products lacking in nutrition, we’re not leaving our health to fate—we’re setting ourselves up for success, one delicious meal at a time.
And it’s a process, for sure. My journey to healthier eating started over 30 years ago, and it happened in baby steps. One of the first changes my husband, Michael, and I made was giving up our morning croissants from the bakery up the street. I still can’t believe we ate those for breakfast—but they were so ridiculously good! Warmed in the toaster oven, flaky and buttery, especially with a spoonful of 18% yogurt… Oh my. But it didn’t take long before the pounds crept on. And I can only imagine what we were doing to our arteries!
A few years later, we stopped buying frozen meals for work lunches. That was a big step, too, because it was just so easy to grab one from the freezer on the way out the door and zap it in the microwave later.
Little by little, small changes add up
But the journey wasn’t a straight line—we’d make healthier choices for a while, then old habits would creep back in. Change takes time. We all need time—to adjust, to learn new habits, to try new recipes, and to notice the difference. How our brains feel sharper. How our clothes fit better. How we feel lighter on our feet and more agile.
But small changes add up. Looking back, I realize that every healthier choice wasn’t just about avoiding the bad—it was about discovering better! With a new fresh approach to how we ate and cooked these life-giving recipes became our new comfort meals, and they created new food memories that made us feel good.
That’s what I call making your own luck. When we truly enjoy vibrant flavours, fresh ingredients, and food that actually nourishes us, we reap the benefits over and over again.
Be intentional
Being intentional with what’s on your plate is the easiest way to stack the luck in your favour, which is why I created this vibrant Avocado-Lime Dressing. It’s fresh, light, and ridiculously easy to make. In five minutes, you’ve got a dressing (or dip!) that turns even the simplest meal into something special.
Drizzle it over your next salad or a platter of roasted vegetables. Keep it thick and use it as a dip for crunchy veggies, or spread it on your next sandwich. It’s also completely customizable—swap the parsley for dill, change the tarragon for oregano, or try lemon juice instead of lime juice. Small changes, big impact.


And the best part, you’ll make everyday meals feel a little more special—like striking gold. Only in this case, it’s green!

Recipe: Avocado-Lime Dressing
This vibrant dressing is packed with flavour and healthy fats. Play with the herbs to create your own flavour combinations.
Makes 3/4 cup
½ a large ripe avocado, pit and skin removed
2 tbsp lime juice
1 tbsp avocado or olive oil
1 tbsp chopped white or yellow onion
1 clove garlic
1 tsp Dijon mustard
½ tsp dried tarragon
4 sprigs parsley
Pinch cayenne, or to taste
Salt, to taste
½ cup water (or more less to create a dip)
Assemble all ingredients in a smoothie cup or blender. Process until smooth adjusting the water amount as you go. Remove to a bowl. Refrigerate until ready to serve.
