I don't think I could totally omit meat. However, we have gotten to where our meat portions are smaller and we have more variety with vegetables, rice and pulses.

That is a great place to be. That's why I've called this blog, CJ's Fresh Approach'. This isn't about eating plants and nothing else. Off you want to eat meat, great. If you don't, great too. But having meat play a smaller role is a good thing. Create a rainbow on your plate. It offers more nutrients and flavours. Your body and palate will thank you. And your meal will be really interesting too. We used to eat and entire rib eye each. Now one feeds the three of us.
Yes we are like that as well. We probably eat 4 oz of meat at the most now. We are eating a lot more pulses which we have always liked, but with new recipes we are eating them more often.
I can't wait to try this! On my meal plan for next week. I love a main course dish with apricots and cinnamon. Umm
